Make the injection. Combine chicken stock, soy sauce and BBQUE TEXAS Cluckin’ Good in a saucepan. Warm over medium-low heat, stirring occasionally to combine. Remove from heat and allow to cool before using.
Prep the turkey. Remove the skin from the turkey breast, if attached. Place the turkey breast in an aluminum or smoker-safe pan and scatter the cubed butter around the bottom.
Inject the turkey. Using a meat injector, inject the cooled mixture throughout the turkey breast approximately every 1–2 inches, focusing on the thickest portions for even distribution.
Season. Lightly coat the turkey breast with cooking spray as a binder. Season all sides with an even layer of BBQUE TEXAS Cluckin’ Good Poultry Seasoning.
Smoke. Preheat the smoker to 275°F. Place the turkey breast, still in the pan, on the smoker and cook for approximately 2–2½ hours, or until it reaches the desired internal temperature.
Check the temperature. Smoke until the thickest part of the turkey breast reaches approximately 163–165°F. Always use a meat thermometer rather than relying solely on cooking time.
Rest and slice. Remove the turkey from the smoker and allow it to rest before slicing across the grain. Serve warm or use it for sliders, club sandwiches, tacos and your favorite game day recipes.
