Combine ingredients for brine in a saucepan, mix well and bring to a soft boil then set in the fridge to cool.
Once the brine has cooled add the brine mixture and the turkey breasts to a Ziplock bag and set in the fridge for 1 hour (minimum).
While the turkey is in the brine, add ingredients for the glaze mixture to a squeeze bottle, mix well, and set aside.
Once the turkey has been in the brine for 1hour, remove the turkey breasts, RINSE WELL!
Prepare a baking sheet with 3 or 4 pats of butter, sprinkle some more Cluckin’ Good Poultry Rub over the butter pats, and then place the turkey breasts on the sheet and score with a sharp knife as seen in the picture.
Season the tops of the turkey with another generous layer of Cluckin’ Good Poultry Rub and set the baking sheet on the pre-heated smoker.
Allow them to smoke for approximately 1 hour or until the internal temperature is 155.
Apply a generous amount of glaze, wait 15 minutes and apply the glaze again.
Once they have reached an internal temperature of 163 to 165 – remove them from the smoker and allow them to rest for 10 minutes.
