Ingredients
- 2 lbs Ground Chuck Beef
- 1 package Burger Buns, Toasted
- 8 slices Muenster Cheese
- 1 1/2 cup Duke's Real Mayonnaise
- 3/4 cup Whatburger Spicy Ketchup
- 2 tsp Worcestershire Sauce
- 2 tbsp Relish
- 1 Yellow Onion
- 1/2 Package Irish Butter
- BBQUE TEXAS The "OG" + SP Brisket & Beef Seasoning
- 2 tbsp BBQUE TEXAS Holy Grail All Purpose Seasoning
- 3 tbsp Olive Oil
Instructions
- First, here's a pro tip! Make sure the burger meat you are using has a high fat-to-lean ratio. Our recipe suggests using a ground beef that’s 80% lean, 20% fat, but anything over 15% fat will work well (The higher percentage of fat helps keep the burgers moist, and gives them a better flavor!) A lot of the fat will render off during cooking, so don’t worry about them turning out greasy or too fatty. They’ll be perfectly juicy, tender, and full of flavor.
- We use our Blackstone Griddle for these smash burgers. This recipe is pretty versatile, so it can also be made on a cast iron skillet or on your stovetop. Preheat your griddle or cast-iron skillet over medium-high heat until it's very hot, about 3 minutes. Spray on around 3 tablespoons of olive oil.
- Divide your meat into 8 even patties by using your hands to form the meat into loosely packed balls. . You can use a kitchen scale if desired, or simply eyeball the amount. You should end up with around 1/4-pound patties.
- Cut up your onions so they are prepped in advance by removing the skin, cutting the ends off, and slicing them skin removed, ends cut off, cut in half and sliced them ring style.
- Premake your homemade burger sauce by mixing together the mayonnaise, ketchup, relish, worcestershire sauce and our BBQUE TEXAS Holy Grail Seasoning (this sneaky ingredient adds so much extra flavor!)
- Add your onions to the griddle to start caramelizing, along with some butter and top them generously with The "OG" + SP Brisket & Beef Seasoning. Remove them once they have a nice and grilled carmelized color.
- Add the parchment paper to the tops of your burger balls and then flatten the ball with your burger press to form 4-inch-wide patties that are pretty thin and about 1/2-inch thick so they cook quickly. Top the burgers generously with The "OG" + SP Brisket & Beef Seasoning Cook until the edges are brown for 2-3 minutes (the interior should still stay nice and juicy!)
- Flip the burgers and place 1 slice of cheese on top of each patty. Continue cooking until the cheese is fully melted for another 2 to 3 minutes.
- Add a square of butter and then toast each side of your burger buns on the griddle.
- Serve immediately by placing two of your patties stacked up on toasted buns with your grilled onions, drizzled burger sauce on top and then your desired toppings.
- Another pro tip! We flip our buns so they are backwards. They look even tastier this way! You're ready to now dig in and enjoy!
